Overview

This role is eligible for a Sign On/Retention Bonus of $3,000.

The Food & Nutrition Services (FNS) Department at Dartmouth-Hitchcock encompasses Patient Food Services, Clinical Nutrition, and Dining Services. FNS aims to provide a nutritional environment which supports a population-level approach to a healthy diet and aligns with the D-H commitment to improve the health and wellness of our patients, employees, and community and create a sustainable health system.

A Cook reviews menus, work orders or customer orders to determine type and quantities of food to be prepared. May plan menus and estimate required food quantities, labor and overhead costs.

Responsibilities

• Prepares vegetables in bulk for later use in recipes.

• Slices deli meats and vegetables for cold food service

• Follows recipes to make bulk products following standardized recipes and production methods. Creates recipes for retail sales.

• Prepares patient nourishment's and write-ins as tallied following proper production procedures.

• Assembles and plates patient salads and sandwiches for tray line assembly. Assembles add-on sheet items and tube feeding items following proper procedures.

• Prepares food items for all areas.

• Ensures that area and equipment are maintained up to accepted standards and quality.

• Loads and operates dish washing equipment. Takes dish machine temperatures daily.

• Takes food temperatures daily to assure compliance with State and Joint Commission standards.

• Performs assigned cleaning functions, ensuring that areas and equipment are maintained up to accepted standards of quality.

• Operates food preparation equipment (ex. slicer, chopper and buffalo)

• Performs catering related duties. Sets up, delivers and/or picks up food items for scheduled functions following existing procedures.

• Maintains and properly stocks all necessary food and supply items.

• Labels and dates all necessary food and supply items.

• Uses and mixes chemicals in a safe manner. Labels all secondary bottles.

• Performs other duties as required or assigned.

Qualifications

• High school diploma (or GED) strongly preferred.

• Ability to read and write required.

• Prior satisfactory work experience is desired.
